FRESH PEACH COBBLER | |
3 c. sliced fresh peaches 1 c. sugar 1/4 tsp. almond extract 1 tbsp. lemon juice 1 tsp. grated lemon peel 1 1/2 c. sifted flour 3 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1/3 c. shortening 1/2 c. milk 1 well-beaten egg 2 tbsp. sugar Arrange peaches in greased 8x8x2 inch pan. Sprinkle with mixture of 1 cup sugar, almond extract, lemon juice and lemon peel. Heat in oven while preparing shortcake. Sift together flour, baking powder, 1 tablespoon sugar and salt. Cut in shortening until mixture is like coarse crumbs. Add milk and egg at once; stir until flour is moistened. Spread dough over hot peaches; sprinkle with 2 tablespoons sugar. Bake at 400 degrees for 34-40 minutes. 8 servings. |
