CHICKEN BREAST WITH CRISP CHEESE
TOPPING
 
1 chicken breast, skinned, boned and cut in two
Salt and fresh ground pepper
2 tbsp. each: chicken broth, dry white wine or vermouth
2 tbsp. each: bread crumbs, grated cheddar cheese
1 tbsp. butter
Chopped parsley

Flatten each half of breast between 2 pieces of waxed paper or plastic wrap to about 1/3 inch thickness. Season with a little salt and pepper. Put into a lightly buttered shallow baking dish - just large enough to hold them.

Combine broth and wine and pour over chicken. Mix together bread crumbs and cheese. Sprinkle over chicken and dot with butter. Bake at 350 degrees for 20 to 25 minutes until golden and tender. Sprinkle with chopped parsley. If you want the chicken thicker do not pound out and bake about an hour. 2 servings.

I serve this with a side dish of UNCLE BEN'S® wild rice and a green vegetable. Also a tossed or fruit salad for accompaniment. This makes a good company dish by doubling or tripling (etc.) the recipe. May be put together earlier, refrigerated and then baked when needed.
