QUICK AND EASY LASAGNA | |
1 1/2 lbs. ground beef 2 tbsp. drippings 1 (16 oz.) can stewed tomatoes 1 (12 oz.) can tomato paste 1 tbsp. salt 1 1/2 lbs. Ricotta or cottage cheese 3 eggs, beaten 3/4 tsp. pepper 8 oz. lasagna noodles, cooked and drained 8 oz. Mozzarella cheese Brown beef, stir in stewed tomatoes and paste and 1 teaspoon salt. Cover and simmer 30 minutes. Mix beaten eggs, cottage cheese and 2 teaspoons salt and 3/4 teaspoon pepper. Place 1/3 sauce in 13 x 9 x 2 inch baking dish. Top with half lasagna. Add 1/2 of cottage cheese and 1/2 of the Mozzarella cheese. Repeat with sauce, lasagna noodle, cottage cheese, Mozzarella cheese. Top last with remaining sauce. Bake at 350 degrees for 30 minutes. Let stand 10 minutes before cutting. |
