BROCCOLI CORNBREAD 
1/2 c. butter, melted
1 tsp. salt
2/3 c. cottage cheese, low fat
1 (8 1/2 oz.) pkg. Jiffy cornbread mix
1/3 c. onion, chopped
4 eggs (or Egg Beaters)
1 (10 oz.) pkg. frozen broccoli, thawed

Combine all ingredients except broccoli and beat well. Add broccoli. Pour into muffin pans sprayed with Pam. May bake in 9 or 10 inch round or square pans. Bake at 400 degrees for 20 to 30 minutes. Makes about 12 muffins.
