CHEESE CAULIFLOWER | |
1 med. head cauliflower (about 2 lbs.) 2 tbsp. butter 2 tbsp. all-purpose flour 1 tsp. dry mustard 1/2 tsp. salt Dash pepper 1 c. milk 1 c. shredded process sharp American cheese (4 oz.) 5 drops red pepper sauce Paprika Prepare and cook cauliflower. Heat butter in 1 1/2 quart saucepan over medium heat until melted. Stir in flour, mustard, salt, and pepper. Cook, stirring constantly until smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese and pepper sauce.. Cook and stir over low heat until cheese is melted. Pour over hot cauliflower. Sprinkle with paprika. 4 servings. 280 calories per serving. |
