APPLE WALNUT SQUARES 
4 c. apples, peeled and coarsely chopped
2 c. sugar
2 eggs, slightly beaten
1/2 c. vegetable oil
2 c. flour
2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. walnuts, chopped

Preheat oven to 350 degrees. Combine the apples and sugar and let stand until sugar is absorbed, about 45 minutes. Beat the eggs and oil with a wire whisk. Sift the flour, baking soda, cinnamon and salt together. Stir, alternating the egg mixture and the flour mixture into the apple mixture. Stir in the walnuts. Spread into a greased and floured 13 x 9 baking pan. Bake for 1 hour.
