APPLE MUFFINS 
2 1/4 c. oat bran cereal
1/4 c. brown sugar
1 1/4 tsp. cinnamon
1 tbsp. baking powder
1/4 c. chopped nuts
1/4 c. raisins
1/2 c. evaporated skim milk
3/4 c. frozen concentrated apple juice
2 egg whites
2 tbsp. vegetable oil
1 lg. apple

Heat oven to 425 degrees. Mix dry ingredients together in large bowl. Mix liquids together and add to dry ingredients. Mix with spoon. Core and chop apple and add to mixture. Spoon into muffin tins lined with paper baking cups. Bake 17 minutes. Makes 12 muffins.
