LIME WHIP SALAD 
1 lg. pkg. lime Jello
1/2 tsp. salt
2 c. boiling water
1 c. cold water
2 tbsp. vinegar
1 c. mayonnaise
1 1/2 c. diced grapefruit
1 1/2 c. chopped celery
2 tbsp. chopped onion
1 pkg. frozen shrimp, optional

Dissolve lime Jello and salt in boiling water. Add cold water and vinegar and mayonnaise. Blend with beater. Quick freeze in freezer tray just until firm 1 inch from edge. Pour into bowl and beat until fluffy. Fold in grapefruit, celery and onion. Chill in a mold. When ready to serve unmold, serve plain, or with shrimp. Serves about 4-6.
