NEW POTATOES IN LEMON PARSLEY
SAUCE
 
4 new potatoes, about 1/2 lb.
Boiling water
1 tbsp. butter
1/2 tsp. grated lemon peel
1 tbsp. lemon juice
1 tbsp. chopped parsley

Cook potatoes in boiling water for 15 to 20 minutes or until tender. Drain and peel.

Melt butter in saucepan over low heat. Mix in lemon peel, lemon juice and parsley. Add potatoes and cook over medium heat, turning frequently, until hot and coated with butter. Makes 2 servings.

MICROWAVE: In 1 quart microwave proof casserole, cover and microwave potatoes and 1/4 cup water on HIGH (100% power) for 5 to 7 minutes. Drain and peel potatoes. In same dish microwave butter on HIGH for 30 seconds. Add lemon peel, lemon juice, parsley and potatoes. Microwave on HIGH for 30 seconds. Toss potatoes to coat with butter before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
