APPLE-BANANA CAKE | |
1/4 lb. butter 1 1/2 c. sugar 2 eggs 2 c. flour 1/2 tsp. salt 1/2 tsp. baking powder 3/4 tsp. baking soda 1 c. mashed banana 1/4 c. buttermilk 1 tsp. vanilla 1/2 c. minced dried apple Preheat oven to 350 degrees. Butter two 9 inch layer cake pans and dust lightly with confectioners' sugar. Cream the butter until soft and fluffy. Gradually beat in the sugar. Add 1 egg at a time, beating well after each one. Sift the flour, salt, baking powder and soda together. Mix the banana, buttermilk and vanilla together. Add 1/3 of the flour mixture to the butter mixture, and then 1/3 of the banana mixture. Repeat until all has been added. Beat until smooth after each addition. Add minced apple. Divide the mixture evenly between the two pans. Bake 30 minutes, or until a cake tester inserted in the center of the cake comes out clean. Cool on a cake rack and then carefully remove from pan. The cake may be put together with whipped cream and sliced bananas. Serves 10. |
