CAJUN SHRIMP SAUTE | |
1 c. diagonally sliced celery 1 c. red, green or yellow pepper strips, thinly sliced 1 c. fresh mushrooms, thinly sliced 1/2 c. onion, chopped 2 tbsp. butter 1 tbsp. olive oil 1 (14 1/2 oz.) can stewed tomatoes & juice 1/4 c. fresh parsley, chopped 1/2 tsp. oregano 1 tsp. thyme leaves 1/4 tsp. salt 1/4 red pepper flakes 1 tsp. Cajun seasoning 1 c. fresh or frozen okra 1 lb. cleaned fresh or frozen shrimp 3 c. hot cooked rice Saute celery, peppers, mushrooms and onions in butter and oil in large skillet. Stir in tomatoes and juice, thyme, salt, oregano, Cajun seasoning, red pepper flakes and okra. Heat to boiling. Reduce heat; boil gently 5 minutes or until okra is just tender. Stir in shrimp and parsley and cook 5 minutes or until shrimp just turns pink. Serve over hot cooked rice. |
