CRAWFISH CASSEROLE 
1 pt. peeled crawfish
1 can mushroom soup
1 can Rotel tomatoes
2 pkg. yellow rice
1 lg. chopped onion
1 c. chopped celery
1/2 c. chopped sweet pepper
Green onions
Parsley
Bread crumbs

Cook onion, celery, bell pepper, green onions and parsley until wilted in small amount of water. Add crawfish and soup. Cook 5 minutes. Cook yellow rice as directed on package. Add cooked rice to crawfish mixture in baking dish. Heat oven to 350 degrees, cook covered for 20 minutes. Sprinkle bread crumbs and cook for 10 to 15 minutes uncovered. Shrimp may be substituted for crawfish.
