MINESTRONE 
1/4 lb. cooked ham, cut up
6 sprigs parsley
2 ribs celery
2 med. carrots
1 tbsp. dried basil
1 tsp. oregano
2 tbsp. olive oil
6 c. water
1 (8 oz.) can white beans, drained
1/4 c. uncooked macaroni
1 (28 oz.) can tomatoes
1 lg. potato, pared and diced
1 3/4 tsp. salt
1/4 tsp. pepper
3 c. shredded cabbage
3 c. sliced escarole
1 (10 oz.) pkg. frozen peas
1 med. onion, sliced

In blender, make a paste of ham, 1 each celery and carrot, basil, and oregano. In large kettle cook paste in hot oil 3 minutes. Add water, tomatoes, celery and carrot sliced thin, potato, salt, and pepper.

Cover; simmer 10 minutes. Add cabbage, escarole, peas, and onions. Simmer 15 minutes. Add beans and macaroni. Cover and simmer 20 minutes or until macaroni is tender. Serve with Parmesan cheese.
