HEARTY BAKED POTATO SALAD 
8 medium red potatoes
1/2 c. chopped onion
2 tbsp. parsley, chopped (I used 1 tbsp. dry parsley)
1 can Cheddar cheese soup
1/2 c. mayonnaise
1/2 c. plain yogurt
1/2 c. bacon, cooked, drained, and crumbled (I used the real bacon bits which
come in a can)
Paprika for garnish

Peel potatoes; boil until just soft, not mushy. Cut in 1/2 inch chunks. Spread potatoes evenly over bottom of 13 x 9 inch dish. Combine onions, parsley, soup, mayonnaise, and yogurt; pour over potatoes. Sprinkle bacon on top. Garnish with paprika. Cover with aluminum foil and bake at 350 degrees for 1 hour, uncovering during the last 30 minutes.
