CHICKEN CHILI 
1 1/4 chicken breasts, boned, skinned and diced
1/2 red pepper, diced
1/2 green pepper, diced
1/2 lg. onion, diced
1 1/2 lbs. Italian plum tomatoes, cubed
3 tbsp. chili powder (more, if desired)
2 tsp. ground cumin
1 tsp. salt
1 tsp. black pepper
2 (1 lb.) cans white cannelloni beans, undrained
Olive oil
Chicken broth and/or tomato juice

Cover bottom of large saucepan with olive oil. Braise the chicken with the onion. Add peppers, tomatoes, and seasonings. Simmer 30 minutes. Add undrained beans and heat through. Add chicken broth and/or tomato juice if mixture is too thick. Serves 8.
