1/2 c. butter, softened 1 tbsp. vanilla 1 egg 1/2 tsp. baking powder 1/2 tsp. salt 1/2 c. granulated sugar replacement 1 tbsp. water 1 2/3 c. flour, sifted 1/2 tsp. baking soda 1 oz. baking chocolate, melted Cream butter, sugar replacement and vanilla until light and fluffy. Beat in water and egg. Sift together dry ingredients; blend into creamed mixture. Divide dough in half. Blend 1 ounce of melted baking chocolate into one-half of dough. Thoroughly chill both dough halves. Roll each half of dough into a 10 inch square. Brush on layer with water, place other layer on top, roll up as for jelly roll. Cut into 1/8 inch slices. Bake at 375 degrees for 6 to 8 minutes. Yield: 80 cookies. Exchange: 2 cookies 1/3 bread, 3/5 fat. Calories 2 cookies: 44. |
