YAM BRAN BREAD 
1 stick butter
3/4 c. sugar
2 egg whites
1 1/2 c. flour
1/2 c. oat bran
3 tbsp. sour skim milk
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1 tsp. vanilla
2 med. yams, baked, peeled and mashed

Combine butter, sugar and egg whites. Add remaining ingredients until moistened. Place in muffin tins or a greased and floured loaf pan. Bake at 350 degrees until toothpick inserted comes out clean. Yield: 1 loaf or 12 muffins.
