PARTY BROCCOLI CASSEROLE 
1 large onion, chopped
1/2 cup butter
4 (10 oz.) pkgs. broccol1 spears
1 can Cream Of Mushroom soup
1 1/2 rolls garlic cheese
1 pkg. fresh mushrooms or 3 (4 oz.) cans, sliced
1 cup Pepperidge Farm Herb stuffing mix

Preheat oven to 350°F.

Sauté onions in butter; melt cheese in soup; wash mushrooms and slice. Combine all these.

Cook broccoli according to package directions and drain. Alternate layers of broccoli and sauce in a lightly buttered 2 quart casserole.

Crush stuffing slightly with a rolling pin and sprinkle over the top of casserole.

Bake at 300°F for 25 minutes or until bubbly.

Note: You can substitute Boursin herbed garlic spread for garlic cheese or make your own by combining 2 (3 oz) rolls of goat cheese with one softened package of cream cheese plus 1/2 teaspoon of garlic powder (or 5 cloves garlic). Pulse in a food processor. To take the edge off fresh garlic, sauté in olive oil before adding.

Serves 12.

Garlic Cheese Roll Substitute

1 (8 oz.) jar Kraft Cheez Whiz
1 tsp. garlic powder
dash seasoned salt

Melt ingredients together, let cool slightly, roll and wrap in plastic wrap and freeze until needed.
