BROCCOLI SOUP 
1/4 c. salad oil
1 med. onion, diced
1 lg. potato, diced
2/3 c. diced celery
1/2 tsp. pepper
3 c. chopped broccoli or 1 (10 oz.) pkg. frozen chopped broccoli, thawed
5 c. chicken stock
1 tbsp. dried basil
Salt to taste

In large saucepan, heat salad oil. Add onion and saute until tender, about 10 minutes. Add potato, celery, and pepper. Cook for 10 minutes, stirring occasionally. Stir in broccoli, broth and basil. Cover and simmer for 20 minutes. Add salt, if desired. Makes 6 cups. About 125 calories per cup.
