NEW ENGLAND CLAM CHOWDER | |
Fat back - rendered chunk removed from pan 5 c. diced potato 1 med. onion, diced Celery, chopped Sm. amount of grated carrot Add 2 cups water, juice from 4 (6 1/2 ounce) cans minced clams. (If use fresh clams use 1 1/2 pints clams and run through blender to mince.) Add 1/8 teaspoon celery salt, 1 teaspoon bay seasonings, salt and pepper. Simmer until potatoes and other vegetables are done. Add 2 cups milk or 1 tablespoon cornstarch mixed in 1 1/2 cups Half and Half. Add some whipping cream or evaporated milk and simmer an hour or so. Never boil. Enjoy!! |
