KEY WEST FISH 
1 lb. pompano, grouper, or roughy fillets

MARINADE:

1 tbsp. ginger, cut into slivers
2 cloves garlic, chopped
1/4 c. chopped fresh cilantro
1/4 c. olive oil
2 tbsp. lime juice
Pinch of salt
1/8 tsp. freshly ground pepper

Mix together ginger and garlic and chop until fine. Add rest of ingredients and blend/process until puree is gold-colored with green specks. Cover fish with marinade and allow 15 minutes. Place dish in oven at 450 degrees and bake for 10-12 minutes.
