PUMPKIN COOKIES 
1 1/2 c. pumpkin
1/2 c. butter
1 c. sugar
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped walnuts
1 egg
2 c. unsifted flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 pkg. butterscotch morsels

Mix all ingredients in order given; drop by spoonfuls onto greased cookie sheet. Bake in 375 degree oven for 12 to 14 minutes. Raisins, pecans or coconut may be substituted for the butterscotch chips. Serves: 48. Yield: 4 dozen cookies.
