PICKLED BEETS 
2 (1 lb.) cans sm. whole beets or sliced beets
1 c. white vinegar
1/2 c. white sugar
1 tsp. salt
3 whole cloves
4 whole black peppercorns
1 sm. bay leaf
2 med. white onions

Peel and thinly slice onions. Drain beets. Reserve 1 1/4 cup liquid. Place beets and onions in glass jar or glass bowl.

In medium saucepan, combine 1 1/4 cup liquid, vinegar, sugar, salt, cloves, peppercorns and bay leaf. Bring to boil. Simmer 5 minutes.

Pour hot liquid over beets and onions. Cover and refrigerate.
