PECAN COFFEE CAKE 
1 1/3 c. packaged biscuit mix
3/4 c. sugar
3/4 c. milk
1 egg
3 tbsp. soft butter
1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour 8x8x2 pan. In small bowl of electric mixer combine biscuit mix, sugar, 1/4 cup milk, egg, butter, and vanilla. Beat at medium speed 1 minute or just until smooth. Add remaining milk; beat 1/2 minutes. Turn into baking pan. Bake 35-40 minutes or until cake tester comes out clean.

TOPPING:

1/2 c. light brown sugar
1/2 c. pecan halves
1/4 c. soft butter
2 tbsp. light cream or evaporated milk

Make topping and spread over baked cake. Broil 2-3 minutes until bubbly. Makes 9 servings.
