STEAK LOUIE 
1 (1 1/2 to 2 lb.) top sirloin steak, about 1 inch thick
1 med. size yellow onion
1/4 c. Heinz ketchup
2 tbsp. beef broth or water
Salt and pepper to taste

Trim any fat around steak and discard. Set steak aside. Slice onion into eighths. Separate wedges and set aside. Heat about 2 teaspoons of vegetable oil in a large frypan or wok using high heat. Swirl oil around frypan so oil coats entire bottom.

As oil just begins to smoke, put steak in and sear about 1/2 minute on each side. Take steak from frypan and place on a platter. Set aside. Turn heat to low. Add onions and stir fry for about 1/2 minute. Add ketchup and continue stirring. Add broth or water. Continue stirring until well mixed. Let mixture heat. Meanwhile, place steak on cutting board and cut into bite-sized chunks. Salt and pepper to taste. Turn heat up on fry pan to high. As ketchup mixture begins to boil, add steak. Stir fry for about 1 minute for rare and 2 minutes for medium. Serve over a bed of rice or egg noodles.
