2/3 c. hot milk
1 c. bread cubes
1 c. orange juice
2 tsp. grated orange rind (optional)
4 eggs, beaten
1/2 c. sugar
1/4 tsp. salt

Soak bread cubes in hot milk for 5 minutes. Add remaining ingredients and stir. Pour pudding into 1 quart baking dish and set in a pan of hot water. Bake at 350 degrees for about 1 hour.
