SPINACH QUICHE 
1 pie crust
1 pkg. chopped spinach, frozen or canned
1/2 c. chopped onion
1/4 c. melted butter
2 eggs, lightly beaten
1/4 c. grated Parmesan cheese
Pepper (dash)
Salt
6 slices of bacon, cut into 2 inch pieces

Cook bacon until soft but not crisp. Arrange pieces on bottom of pie crust. Defrost spinach, drain thoroughly. Squeeze as dry as possible.

Add onion, butter, eggs, and cheese, pepper and salt as desired. Garlic or garlic can be used, though I do not use it.

Mix all ingredients well, spread the mixture over the bacon. Bake at 350 degrees for 30 minutes or until crust shows brown and top of spinach is dry and lightly toasted.
