SALTED PEANUT CHEWS | |
CRUST: 1 1/2 c. all-purpose flour 2/3 c. brown sugar, firmly packed 1/2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1/2 c. butter, softened 1 tsp. vanilla 2 egg yolks 3 c. miniature marshmallows TOPPING: 2/3 c. Karo syrup 1/4 c. butter 2 tsp. vanilla 1 (12 oz.) pkg. peanut butter chips 2 c. Rice Krispies 2 c. salted peanuts Heat oven to 350 degrees. Lightly spoon flour into measuring cup, level. In a large bowl combine all crust ingredients except marshmallows. Mix at low speed until crumbly. Press firmly into a greased 13 x 9 inch pan. Bake 12 to 15 minutes until lightly brown. Remove from oven and pour marshmallows over crust. Return to oven and bake 1 to 2 minutes. In a large saucepan, heat corn syrup, butter, vanilla and chips until chips are melted, stirring constantly. Remove from heat. Stir in cereal and peanuts, spread over crust while still warm. Refrigerate until firm. Cut into bars. Makes 36. |
