CHICKEN BREASTS A L'ORANGE
4 whole chicken breasts, boned & halved
1 c. herb seasoned stuffing
3/4 c. butter, divided
Water
1 c. finely crushed corn flake cereal

ORANGE SAUCE:

1/2 c. white granulated sugar
1/2 c. brown sugar
1/4 tsp. salt
1 tbsp. cornstarch
1 tsp. grated orange peel
1 c. orange juice

In a small bowl, toss the dry stuffing mix with 1/4 cup of the butter. Add enough water to moisten slightly. Place 2 tablespoons of stuffing in each cavity of the chicken breasts. Pull the skin over to cover stuffing. Dip breast in remaining 1/2 cup of butter which has been melted in the oven in a 9 x 13 x 2 inch casserole. Roll breasts in corn flake cereal crumbs and return to the casserole, skin side up.

FOR ORANGE SAUCE: In a small saucepan, combine the dry ingredients. Add orange juice slowly, stirring constantly. Continue stirring as mixture comes to a boil. Simmer until sauce is clear and transparent. Pour the Orange Sauce over the chicken and bake at 325 degrees for 1 hour or until chicken is very tender and glazed. Baste often.
