POTATO CHEESE SCALLOP | |
2 tbsp. butter 1 med. onion, thinly sliced 6 med. potatoes 1 c. grated sharp process cheese 2 tbsp. flour 2 tsp. salt 1/8 tsp. pepper 2 1/2 c. milk 1/4 c. finely crushed cracker crumbs or potato chips Melt butter in skillet; saute onion slices until browned lightly. Peel and slice potatoes. Put layer in bottom of greased 2 quart baking dish, add 1/4 cup of the onions, sprinkle with 1/4 cup of cheese, 1/2 tablespoon flour, salt and pepper. Repeat layers. Pour milk over top. Sprinkle with crumbs. Cover and bake at 350 degrees for 1 hour. Remove cover last 15 minutes. |
