CREAMY RICE PUDDING 
1 pkg. (4 serving size) Jell-O brand vanilla pudding & pie filling (not the instant) sugarless
4 c. skim milk
1/4 c. Eggbeater (or 1 egg, well beaten)
1 c. dry Minute rice
1/4 c. raisins (optional)
1/4 tsp. cinnamon
1/8 tsp. nutmeg

Gradually stir milk and Eggbeater into pudding in a saucepan. Add rice and raisins. Stir over medium heat until mixture just comes to a boil. Pour into bowl. Cover with plastic wrap over bowl. Chill about 1 hour. Stir and serve with Cool Whip.
