ARTICHOKES BENEDICT 
1 pkg. frozen artichokes
2 English muffins, split
4 thin slices boiled ham
2 egg yolks
1/4 c. melted butter
1/4 c. boiling water
2 tsp. lemon juice
1/4 tsp. salt
Dash pepper and cayenne

In 2 cups boiling salted water, cook artichokes, covered, about 5 minutes. Toast, then butter split muffins. Saute ham slices until just browned. Keep all warm.

In top of double boiler, beat egg yolks until thickened and lemon colored. While continuing to beat, gradually add melted butter. Then slowly add water. Cook, stirring, over hot water until thickened. Remove from heat. Stir in lemon juice, salt, pepper and cayenne.

Arrange muffins, split side up, in dish. Top each with ham slice, artichokes and sauce. Makes 4 servings.
