PAUL'S FAVORITE PUMPKIN PIE
SQUARES
 
STEP 1:

1 c. sifted flour
1/2 c. quick rolled oats
1/2 c. brown sugar, firmly packed
1/2 c. butter, room temp.

Combine in bowl, mix until crumbly using electric mixer on low speed. Press into ungreased 9"x13"x2" pan. Bake at 350 degrees for 15 minutes.

STEP 2:

Mix while first part is in the oven.

1 can pumpkin (2 c.)
1 (13 1/2 oz.) can evaporated milk
2 eggs
1 tsp. cinnamon
3/4 c. sugar
1/2 tsp. ginger
1/2 tsp. salt
1/4 tsp. cloves

Combine and beat well. Pour onto crust. Bake at 350 degrees for 20 minutes.

STEP 3:

Fix while step two is in oven.

1/2 c. chopped walnuts or pecans
2 tbsp. soft butter
1/2 c. brown sugar, firmly packed

Combine and sprinkle over filling. Return to oven and bake 15 to 20 minutes or until knife comes out clean. Cool in pan, cut into 2" squares. Makes 2 dozen. Top with Cool Whip.
