LIGHTNING CAKE 
1 c. sugar
1 tsp. baking powder
1 c. flour

Melt 1/2 cup butter in a 1 cup measuring cup. Add milk to fill to the 1 cup mark. Add a pinch of salt and 1 teaspoon vanilla. Mix into the dry ingredients by hand until well blended. Bake at 375 for 20 minutes or until lightly browned on top in an 8 or 9 inch greased and floured pan. This is especially good with fresh strawberries or as pineapple upside down cake.
