BECKY'S CHEESE BALL 
3 8oz pkgs of cream cheese
1 cup of sour cream
1 small jar of pimentos
2 pkgs of ranch dressing mix
1 medium jar of green olives
2 cups of crushed pecans
1 box of Ritz crackers

Set cream cheese out for an hour or so to let it soften, once softened place cream cheese, sour cream and ranch dressing mix in a large bowl, mix together. (I use a fork it's easier). add pimentos and mix well, chop up green olives as many as you like, I use about 20, and add to mixture.

Mix with hands to form a large ball. Set aside. Place crushed pecans on wax paper and spread around, you can use as much or as little pecans as you like. Now roll the cheese ball in the pecans, making sure to cover the whole ball. Now place on a plate and mash down to form a circle. Drain the remaining green olives and slice very thinly and place all over the cheese ball, making sure to cover the sides and top. Cover tightly.

Will last about a week in the fridge. I only make these during the Holidays and even give them out as gifts, my family and friends look forward to them. This recipe can be made smaller or larger, that's all up to you.
