STUFFED PORK CHOPS 
6 pork chops (thick cut)
1 1/2 c. toasted cornbread crumbs
1/2 c. chopped apples
2 oz. or 1/2 c. Cheddar cheese
2 tbsp. butter
2 tbsp. orange juice
1/4 tsp. salt
1/8 tsp. ground cinnamon
1/2 c. raisins

Have a pocket cut along fat side of each chop. Salt and pepper each pocket. Toss together bread crumbs, apples, cheese, and raisins. Combine orange juice, salt, and cinnamon. Pour over bread and fruit mixture and mix gently. Stuff pockets of chops. Place in shallow pan and bake at 350 degrees for 1 1/4 hours. Cover with foil and bake 15 minutes.
