TUNA, BEAN AND BELL PEPPER SALAD | |
1 (6 1/2 oz.) can 60% less salt tuna in water, drained 1 (15.8 oz.) can cennellini beans, rinsed & drained 1 c. chopped red bell pepper 1/2 c. minced green onions 1/4 c. chopped shallots 4 tbsp. Chablis or other dry white wine or vinegar 1 tbsp. olive oil 1 tsp. cumin seeds, crushed 1/2 tsp. pepper Combine first 6 ingredients in a bowl; toss well. Combine vinegar and remaining ingredients. Add to tuna mixture, tossing gently to coat. Cover and chill. Yields 3 servings. 198 calories per 1 1/3 cup serving. |
