GREEN CHILI RICE 
1 c. uncooked rice
2 1/4 c. water or chicken broth

Cook rice in broth or water until done. Let cool. 1/2 c. chopped celery 1/2 c. chopped onion 1 c. sour cream 1/2 lb. cubed Cheddar cheese 1 (4 oz.) can diced green chilies

Mix cooked rice, soup, celery and onions. Fold in sour cream. Spread half of mixture in greased casserole. Sprinkle half of the cubed cheese and all the green chilies over rice layer. Cover with remaining rice mixture. Sprinkle with remaining cheese. Bake at 350 degrees for 30-40 minutes.

To make this a nourishing one-dish meal, add 1 cup cooked cubed chicken to the rice mixture.
