CARROT CAKE 
2 c. sugar
1 1/2 c. oil
4 eggs
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1/2 c. chopped walnuts
3 c. grated carrots

Icing:

1 box powdered sugar
8 oz. pkg. cream cheese
3/4 stick butter
2 tbsp. vanilla
1/2 c. nuts

Beat together sugar, oil and eggs. Add in flour, soda, salt and cinnamon. Add in vanilla and nuts. Stir in carrots.

Bake in a 9x13 pan at 350 for 1 hour.

Mix together icing ingredients and frost.
