ZESTY ZUCCHINI AND CHICKEN | |
10 oz. chicken breast, boneless, cut into thin strips 1 clove garlic, minced 2 tbsp. vegetable oil 2 med. zucchini, bite-size chunks 1 1/2 c. mushrooms, sliced 2 tomatoes, coarsely chopped 1 c. Heinz chili sauce 2 tbsp. parsley, chopped 1/2 tsp. oregano 1/4 tsp. basil leaves Salt and pepper to taste 6 oz. linguine, according to pkg. instructions Saute chicken and garlic in vegetable oil. Add zucchini and mushrooms; saute 5 minutes over medium heat. Stir in tomatoes, chili sauce and remainder of spices. Simmer uncovered for 10-15 minutes or until chicken is done and vegetables are tender but crisp. Serve over cooked linguine and sprinkle with Parmesan cheese. Serves 4. |
