CHALUPAS 
Vegetable oil
6 lg. corn tortillas
1 c. refried beans
Salsa
1 lb. ground beef, browned
1 clove garlic, minced
1/2 c. mined onion
1 c. grated cheddar cheese
1 1/2 c. shredded lettuce
1 med. tomato
1 1/2 c. guacamole
1/2 c. sour cream
Ripe olives

Fry tortillas one at a time in hot oil. Hold down center of tortilla with wooden spoon so that the tortilla becomes cup-shaped. Drain on paper towels. Mix beans with salsa to taste. Spread each tortilla with bean mixture. Top with browned ground beef. Sprinkle with onions and cover with grated cheese.

Place in 375 degree oven for about 10 minutes. (Use a cookie sheet or oven-proof plates.) To serve, top each tortilla with lettuce and tomatoes. Spoon guacamole on top. Decorate with a spoonful of sour cream and ripe olive slices. Serve immediately. Try shredded chicken in place of the ground beef for an interesting change. 6 servings.
