SHRIMP ROCKEFELLER 
1 1/2 lbs. shrimp, cooked
2 pkgs. chopped spinach, thawed and drained well
1 c. Velveeta cheese
2 egg yolks, beaten
1 1/2 c. milk
2 tbsp. white wine
3 tbsp. butter
3 tbsp. flour

Melt butter - add flour gradually - stirring constantly. Add 1 1/2 cups milk to sauce - stirring constantly. Take small amount of sauce and mix with beaten egg yolks - add back to sauce. Add cheese and wine.

Put small amount of sauce on bottom of casserole - then spinach - then shrimp - add remaining sauce all over. Sprinkle with paprika. Bake 25 minutes in 300 to 350 degree oven. Serves 6.
