FRUITED RICE PUDDING 
2 c. milk
2/3 c. Minute Rice
1/3 c. sugar
1/3 c. raisins
1/2 tsp. salt
2 eggs, slightly beaten
1 tsp. vanilla
1/4 tsp. nutmeg
1 c. thawed Cool Whip

Combine milk, rice, sugar, raisins and salt in saucepan. Bring to boil over medium heat, stirring constantly. Reduce heat. Simmer, uncovered, 5 minutes, stirring occasionally.

Meanwhile, combine eggs, vanilla and nutmeg. Gradually stir a small amount of the hot rice mixture into the egg mixture mixing well. Return to remaining hot mixture in saucepan. Cook and stir over low heat about 1/2 minute (do not boil). Remove from heat, cover and cool. Before serving, fold in Cool Whip. Spoon into individual serving dishes and garnish with maraschino cherry, if desired.
