THE BEST WINGS ON EARTH
2 tsp. salt
2 tsp. paprika
1 tsp. Cayenne Pepper
1 tsp. onion powder
1 tsp. garlic powder
3/4 tsp. white pepper
10 tbsp. (1 1/4 stick) butter, in all
1 tbsp. plus 1 tsp. Tabasco sauce in all
24 chicken wings- tips removed - room temperature
2 c. vegetable oil
Blue Cheese Dressing

Combine the first six ingredients thoroughly in a small bowl. Melt 5 tablespoons of the butter with 2 teaspoons of the Tabasco sauce. In a small sauce pan over low heat. Pour into a shallow bowl or pie plate, and cool slightly. Place the wings in a large bowl, sprinkle with 2 tablespoons of the seasoning mix, and add the butter, tabasco mixture. Work the seasoning and butter mixture into the wings with your hands. Be sure wings are at room temperature, if they are cold, the mixture will not coat well. Set aside to marinate while you heat the oil. Heat the oil in a large heavy skillet over high heat. When the oil is hot, add as many wings as will fit in a single layer. Fry until crisp and golden brown, about 8 to 12 minutes. Turning several times. Drain on paper towels. Repeat with the remaining wings.
