SWEET POTATO PIE 
3/4 c. sugar
1/2 tsp. cinnamon
1 3/4 c. cooked sweet potato
1/2 tsp. lemon extract
1/2 tsp. salt
3 large eggs
6 oz. evaporated milk

Beat sweet potatoes with electric mixer until smooth (works best if potatoes are warm). Add beaten eggs, sugar, salt and cinnamon and mix well. Add milk and lemon extract. Beat until smooth. Pour into prepared pie shell. Use a 9-inch deep-dish pie shell.

Bake at 425°F for 15 minutes. Reduce temperature to 350°F and bake for 40 to 50 minutes.
