SAUSAGE ROLLS | |
Quick Flaky Pastry (1 batch) 1 lb. good pork sausage meat, Jimmy Dean or Farmer John's work well 1 med. onion, grated 1 tsp. sage 1 egg, beaten with 1 tbsp. milk Preheat oven to 425 degrees. Make pastry following recipe. Mix sausage meat and sage together thoroughly in a mixing bowl. On a floured surface roll out the pastry to form an oblong as thin as you can. Cut oblong into 3, then divide the sausage meat into 3, making three long rolls the same length as the pastry. It helps to sprinkle the sausage meat with flour to keep it from becoming sticky. Place 1 roll of sausage meat onto a strip of pastry. Brush the beaten egg mixture along 1 edge. Fold pastry over and seal as carefully as possible. Turn roll so sealed edge is underneath. Press lightly. Cut into rolls about 2 inches long. Make air cuts in top of rolls. Brush with beaten egg. Place on ungreased baking sheet. Bake 20-25 minutes. Store in airtight container. |
