SWEET POTATO SOUFFLE | |
3 c. sweet potatoes, mashed 1/2 c. milk 1 c. sugar 1 stick butter, melted 2 eggs, beaten 1 tbsp. vanilla TOPPING: 1 c. coconut 1 c. nuts, chopped 1 c. brown sugar 1/2 c. flour 1/3 c. butter, softened Cook and mash sweet potatoes. Add remaining ingredients as listed and mix well. Pour into a greased 9 x 13 inch pan. Prepare topping and spread over sweet potato mixture. Bake in a preheated 350 degree oven for approximately 30 to 40 minutes or until topping is beginning and brown. |
