SWEET POTATO BISCUITS 
3/4 c. cooked mashed sweet potatoes
1/2 c. butter
2 tbsp. brown sugar
2 c. all purpose flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 c. buttermilk

Combine potatoes, sugar and butter and beat. Sift together flour, baking powder and salt then add to potato mixture. Dissolve soda in buttermilk and add to mixture, stirring just until dry ingredients are moist. Turn dough onto floured surface and knead lightly. Roll to 1/2 inch thick and cut. Bake at 400 degrees for 18 to 20 minutes.
