PORK ROAST WITH CHILE GLAZE | |
1/2 tsp. each salt & granulated garlic 2 1/2 tsp. chile powder 1 rolled & tied boneless pork roast (4 lbs.) 1 c. apple jelly 2 tbsp. vinegar Season roast with salt, garlic and 1/2 teaspoon of the chile powder. Place roast fat side up in shallow roasting pan, baking at 325 degrees for 2 hours. In saucepan combine remaining chile powder and other ingredients, bring to a boil, reduce heat and simmer 2 minutes; set aside. About 15 minutes before removing roast, baste with sauce. When roast is done, remove to a warmed platter, and let stand 10 minutes before carving. Mix 1/2 cup pan drippings in sauce, reheat and serve with roast. 12 servings. |
