FRIED BREAD 
2 tbsp. active dry yeast
3/4 c. warm water
2 c. warm milk (scalded)
3 tbsp. sugar
3 tbsp. shortening
1 tbsp. salt
3 c. whole wheat flour
4 to 5 c. white flour
Butter, softened

Dissolve yeast in water in large bowl. Add milk, sugar, shortening, salt and 4 cups of the white flour. Mix until smooth. Add enough of the remaining flour (whole wheat and white combined) to make dough easy to handle. Knead on floured surface about 15 minutes.

Place in greased bowl and let rise (covered), until double. Pinch off small handfuls and stretch with fingers to flatten. Fry in lightly greased pan until brown, turn and brown other side. Serve hot with butter and jam.
